Slow Cooker Sticky Date Pudding with Caramel Sauce
This sweet slow cooker sticky date pudding is the perfect way to finish off a busy day. Prepared with the Baccarat The Tasty Chef 6L Slow Cooker and tastes amazing.
INGREDIENTS
- 200g pitted dates, roughly chopped
- ½ tsp bi-carb soda
- 200g brown sugar
- 10g butter, melted, plus extra for greasing 2 large eggs
- 170g plain flour
- 1 tsp baking powder Ice-cream, to serve
Sauce
- 200g brown sugar
- 300ml thickened cream
- 60g butter
METHOD
- Grease and line the interior basin of the slow cooker with butter and baking paper and set aside.
- Place the dates in a small saucepan along with ½ cup water and bring to a boil.
- Reduce the heat and simmer for 5 minutes or until the dates have softened. Stir through the baking soda and set aside to cool.
- In a large bowl, whisk together the brown sugar, butter, and eggs. Add the cooled date mixture and whisk to combine. Fold through the flour and baking powder and then pour the batter into the prepared slow cooker.
- Place a layer of paper towel under the lid of the slow cooker to create a tight seal and to absorb any excess moisture. Turn the slow cooker on, press the up arrow to 02.8 (2 hours 48 minutes) then select the Low function. The decimal will flash to show the function has begun.
- Meanwhile, combine all the sauce ingredients into a medium-sized saucepan and bring to a simmer.
- Cook, stirring, for 10 minutes or until the sugar has dissolved and the sauce is smooth.
- Once the setting has completed, use a skewer to poke holes in the surface of the pudding and pour over half the sauce.
- Allow the pudding to sit for 5 minutes to absorb the sauce before serving with a drizzle of extra sauce and ice cream. Enjoy!
