Chilli Con Carne
An easy, delicious and healthy dinner! This Chilli Con Carne recipe by @countdown_til_dinner will be a hit.
Preparation time: 1 hour
Serves 6
INGREDIENTS:
- 1 Onion (diced)
- 3 Garlic Cloves (minced)
- 1 Red Capsicum (diced)
- 1 Zucchini (diced)
- 500g Beef Mince (ground beef)
- 800g Crushed Tomato
- 2 Tablespoons Tomato Paste
- 400g Red Kidney Beans
- 400g Black Beans
- 1 Cup Beef Stock
- Salt and Pepper
- 3 Teaspoon Cumin Powder
- 2 Teaspoons Paprika Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Oregano
- Cayenne Pepper (to taste)
METHOD
- Heat a drizzle of olive oil in a pan. Add onions and garlic, and cook for 1-2 minutes.
- Add capsicum and zucchini, and cook for 5 minutes.
- Add beef mince, breaking up any large pieces with a wooden spoon.
- Add spices and salt and pepper, cooking until meat is brown.
- Add crushed tomatoes, tomato paste, stock, and beans.
- Bring everything to a simmer and cook on low for 1-2 hours.
